Gema was created through a collaboration between Chef Lucas Manteca of La Porteña and local oyster farmer Mike Whiteside of Willow Creek Oysters. Mike carefully cultivates his oysters in the pristine waters of the Delaware Bay in Cape May Court House and the Great Bay surrounding Stone Harbor and Avalon, producing oysters that express the unique character of South Jersey's coastal waters.

 

Together, our mission is simple: to bring the highest quality local seafood directly to your event.

We proudly source from local fishermen, shellfish growers, and regional producers whenever possible, celebrating the incredible ingredients found right here along the Jersey coast.

Every oyster, every piece of seafood, and every dish is prepared by Chef Lucas Manteca in the La Porteña kitchen, following the same standards of quality, precision, and hospitality that have become the foundation of the La Porteña experience.

 

Gema is more than a raw bar—it is a celebration of our local waters, our community of growers, and the people who gather around the table to enjoy them.
